Unlike Reddit, you can see who “reduces” (downvotes) comments and threads. In a comment click on more -> activity -> reduces. Yes, it is all the same person.
Regarding strike through text formatting, it’s markdown, so you just type two tildes on each side of the text to strike through like this: ~~[insert text]~~, and you get [insert text].
If you keep your account anonymous and don’t dox yourself, there’s not much to worry about. I’m not scared of a few internet losers trying to dig up info on somebody insignificant and unimportant like me.
It can’t easily be removed since it needs to send out that information into the federated network. At best the function to quickly see that can be removed from the GUI.
I suppose the instance originating the content could receive votes and only report anonymous totals to other instances, but any instance that your votes pass through can still see them.
