The UK has by far the best Indian (of all varieties) in Europe, not NL. I mean, it’s ok here, but nothing like in the UK. This is like culinary 101 man.
Have a sympathy upvote for your wok hei. I love my cast iron. And my enameled cast iron. And my carbon steel. And my copper. I love my Japanese santoku and my German steel. Different tools for different jobs my friend.
That said, if you had to populate a kitchen, from scratch, on a budget, cast iron as your main skillet is a good idea.
Copper with stainless steel interior has the best of both worlds. However, it’s nearly as heavy and very expensive.

Man I am pretty chill (nowadays in my old age), but if I saw my team skipping lunch I’d tell them to stop working and start eating.
There are parts of our jobs that are unavoidable on a few nights or weekends, but I make sure we spread that around fairly, and I take more of them than my team.
Not surprisingly, my team is consistently the happiest so of course other managers complain to me that I’m making them look bad. When our CEO says every manger can set their own work polices. Just change yours!

I’m in the one and only line of work where Mercator makes sense, and even I hate Mercator.
For work at any given point I have 17-20 tabs open. It’s totally useful for me to sort them into tabs to cut out the “noise” when I’m doing research.
Yes! Startpage rocks hard. I wish Safari would let it be the default search engine (FF does with a simple plug in).
