Apple TV is a bit pricey, but at least it’s ad-free. Connect it to a modern TV without internet access, stream your Jellyfin (or Plex) media via Infuse and you are good to go.
I suppose you’re talking about a 32-bit app that wasn’t updated for the newer 64-bit architecture. If yes, then there’s actually a technical reason behind it, not just Apple being dicks. Because other than 32-bit apps, every app that received a 64-bit update should still work on the latest iOS.

I actually switched back to Windows a few weeks ago because I was so tired of all the NVIDIA problems I had on Wayland. A few days later I read that explicit sync finally got merged, lol.

Totally depends on the use case. For data hoarding on a NAS, it’s absolutely fine and the sane choice in regards to pricing.
This has been an issue since NVIDIA introduced alternating frames in the 545 driver. To fix this, explicit sync was recently merged into the Wayland protocol, now all it needs is the merge into Xwayland and the new NVIDIA driver that supports it, which is rumored to be released as a beta around May 15.
Until then, you either have to game on Xorg or use the 535 driver.
