Judaism is passed maternally. Jews aren’t the only ones who believe in the story of Shem or trace themselves back to him. In fact both people trace themselves to a far more recent patriarch, Abraham.
Ashkenazi Jews aren’t the only people in Europe with Levantine ancestry. If you are going to claim that some Levantine ancestry 2000-3000 years ago means you are a Jew, then there’s a whole lot more Jews than just those who practice Judaism. Including everyone in Palestine more or less.
